Pancit is Fillipino for noodle. The Chinese introduced noodles to the Philippines and it has been adopted into their cuisine. So basically this is a chicken and noodle dish but with and Asian flair. Very tasty

Ingredients
- 2 large chicken breasts
- 3 tablespoons baking soda
- 2 cups chicken broth
- 1 - knorr's homestyle chicken bouillon
- 3/4 cup celery diced
- 1/3 cup scallions chopped
- 1 cup carrots juilienned
- 2 tablespoons olive oil
- 3 tablespoons soy sauce
- 4 cloves garlic
- 1 package rice noodles
- 1 medium onion chopped
- 1/4 - head of cabbage chopped
How To Make chicken pancit

Step 1Cut chicken into bite size pieces and gently pat baking soda on chicken and let set at room temp for thirty minutes. Then rinse well now chicken is ready to use.

Step 2Heat oil in skillet. Add onion, and garlic and saute until translucent. Add chicken and cook until almost done.

Step 3Meanwhile soak the rice noodles in warm water until softened.

Step 4Add chicken broth to skillet and the rest of the vegetables. Cook for about 5 minutes.

Step 5Add rice noodles and soy sauce. Cook 5 more minutes.
