I saw a Pad Thai recipe on The Food Network and ran out to get all the ingredients, only to look at the ratings on the recipe and see it was not going to be good. So I decided to use my instincts and re-create it but better and it worked. This is so delicious, if you like pad thai, you've got to give this one a try.

Ingredients

  • 4 ounces rice noodles
  • 2 tablespoons canola oil
  • 2 - chicken breasts, flattened and sliced thinly
  • 1/2 teaspoon salt
  • 1 - egg
  • 1 - carrot, shredded
  • 1 small broccoli head, cut into florets
  • 6 ounces bean sprouts, fresh
  • 8-10 - chives, chopped (fresh)
  • 1/4 cup peanuts, chopped or crushed
  • 3 teaspoons cornstarch
  • SAUCE INGREDIENTS
  • 3 tablespoons fish sauce
  • 2 tablespoons sugar
  • 3 tablespoons water
  • 2 tablespoons rice vinegar
  • 1 1/2 tablespoons chili garlic sauce
