Ingredients
- 4 - chicken breasts, boneless and skinless
- 1 teaspoon salt
- 2 tablespoons olive oil
- 1 - large onion, thinly sliced
- 1 cup grapefruit juice
- 1 cup chicken broth
- 1/2 cup orange marmalade
- 2 tablespoons butter
How To Make chicken in grapefruit sauce

Step 1Pat dry chicken and season with salt. In a large heavy skillet, heat olive oil. Sauté seasoned chicken until browned, 10-12 minutes. Remove chicken and cover with foil to keep warm.

Step 2Add onions to skillet and sauté until tender and browned, 5-6 minutes.

Step 3Add grapefruit juice and broth and reduce by half.

Step 4Add marmalade and cook for an additional 5-10 minutes until the sauce thickens.

Step 5Finish sauce by mixing in butter until melted.

Step 6Return chicken to pan to heat through while spooning sauce over chicken.
