We like the richness the cream cheese adds to this recipe. It's not the same as many of the Tex-Mex recipes we are used to, but it's very good and a great change now and then. Plus, it calls for things I usually have on hand.

Ingredients

  • 2 cups chopped chicken or turkey
  • 1/2 cup chopped green pepper
  • 1 package (8 oz) cream cheese
  • 1 jar (8 oz) salsa, divided
  • 12 ounces velveta cheese, cut into pieces
  • 1/4 cup milk
  • 6 - 6 inch flour tortillas

How To Make chicken enchiladas

  • Step 1
    Stir chicken, green pepper, cream cheese and 1/2 cup salsa in medium saucepan on low heat until cream cheese is melted.
  • Step 2
    Spoon approximately 1/2 cup of chicken mixture down center of each tortilla; roll up. Place in lightly greased 12x8 inch baking dish.
  • Step 3
    Stir process cheese spread and milk in small saucepan on low heat until smooth. Pour over tortillas. cover with foil. Bake at 350 for 20 minutes or until thoroughly heated. Top with remaining salsa.
