Ingredients

  • 4 1/2 cups cubed cooked chicken
  • 28 ounces enchilada sauce
  • 1 1/4 cups sour cream
  • 9 - corn tortillas (6 inch) cut into 1 1/2 " pieces
  • 4 cups monterey jack cheese

How To Make chicken enchilada bake

  • Step 1
    Cook chicken or buy a cooked rotisserie chicken
  • Step 2
    In a greased 13" x 9" baking dish , layer half of the chicken, enchilada sauce, sour cream, tortillas and cheese.
  • Step 3
    Repeat layers.
  • Step 4
    Cover and bake at 375 degrees for 40 minutes. Uncover and bake 10 minutes or longer until bubbly.
  • Step 5
    Let stand for 15 minutes before serving.
