Another Civil War could erupt over what makes up a dumpling! In some places, it's an egg noodle. In other places, it's a thicker "slippery" noodle. In my part of the country, it's a spoonful of cooked biscuit dough. No time to cook? Buy a cooked rotisserie chicken at the grocery store, bring it home, and take at least half of the meat off the bone. You'll probably need about 2-3 boxes of chicken broth to heat up in the pot. You can also use Bisquick to make the biscuits. =^..^=

Ingredients
- 2 pounds chicken breasts or a similar amount of chicken
- 1 box chicken broth or stock, if needed (32 oz)
- 1 tablespoon chicken bouillon cubes or granules, optional
- 1/2 teaspoon poultry seasoning, optional
- 1/2 teaspoon salt, optional
- 1/4 teaspoon pepper, optional
- 1/4 teaspoon turmeric
- DUMPLINGS
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon baking powder
- 1/2 teaspoon dried parsley, optional
- 1/3 cup Crisco
- 2/3 cup milk

Step 1COOKING THE CHICKEN: In a Dutch oven or another large covered pot, put the chicken and enough water to cover. The amount of chicken you cook is totally a matter of personal preference. Simmer on LOW heat for about 45 minutes, COVERED, until the chicken easily separates with a fork. Remove the chicken from the pot and set aside to cool.

Step 2When the chicken is cooled enough, cut or tear it into smaller pieces and return it to the broth.

Step 3Add the box of broth, then enough water for it to be at least 1 - 2 inches above the chicken. Add chicken bouillon, salt, pepper, turmeric, and poultry seasonings.

Step 4MAKING THE DUMPLINGS: While the broth is heating up, stir together the flour, salt, baking powder, and parsley in a medium bowl.

Step 5Cut shortening into the flour using a pastry cutter or fork until it resembles small gravel.

Step 6Add milk a little at a time.

Step 7Mix until you have a soft dough. Let it rest until the broth comes to a boil.

Step 8Stir the chicken off the bottom of the pot one last time. Then drop the biscuit dough into the boiling broth using a heaping regular tablespoon. NO MORE STIRRING ONCE THE DUMPLINGS ARE IN THE BROTH.

Step 9Leave the contents of the pot on a slow simmer, set the timer for 10 minutes. Cook UNCOVERED.

Step 10At the end of 10 minutes, COVER the pot and cook 10 minutes more.

Step 11Serve the chicken and dumplings immediately. Serving suggestion: In West Virginia, this dish is often ladled over a mound of mashed potatoes, with a side of homemade applesauce or cranberry jelly.
