This is one of my favorite recipes to serve at dinner parties. The addition of the dry sherry really gives the sauce a wonderfully delicious flavor so please don't omit it. : ) And, don't forget to remove the toothpicks before serving to your guests. : )

  • 4
    whole chicken breasts, boneless & skinless
  • 8 slice
    cooked ham
  • 8 slice
    swiss cheese
  • 3 Tbsp
    parsley, minced
  • ·
    freshly ground black pepper
  • 1
    egg, beaten
  • 1/2 c
    italian seasoned breadcrumbs
  • 1/4 c
    butter
  • 1 can(s)
    cheddar cheese soup (10 3/4 oz)
  • 8 oz
    sour cream
  • 1/3 c
    dry sherry

How to Make Chicken Cordon Bleu

Step-by-Step

  1. Split chicken breasts in half lengthwise. Place each piece between a folded sheet of waxed paper. Using a meat mallet, flatten to 1/4 inch thick.
  2. Place 1 slice each of ham and cheese in the center of each piece of chicken breast. Roll up each chicken breast lengthwise and secure with a wooden toothpick.
  3. Dip each roll into beaten egg and coat well with bread crumbs. In a heavy skillet, melt the butter and brown the chicken rolls. Place chicken in a 12 x 8 inch baking dish, reserving the drippings.
  4. To the drippings, add the cheese soup, sour cream and sherry. Stir well and pour over the chicken. Bake uncovered in a 350 degree oven for 40 to 45 minutes.
