This is one of my favorite recipes to serve at dinner parties. The addition of the dry sherry really gives the sauce a wonderfully delicious flavor so please don't omit it. : ) And, don't forget to remove the toothpicks before serving to your guests. : )

Ingredients

  • 4 - whole chicken breasts, boneless & skinless
  • 8 slices cooked ham
  • 8 slices swiss cheese
  • 3 tablespoons parsley, minced
  • - freshly ground black pepper
  • 1 - egg, beaten
  • 1/2 cup italian seasoned breadcrumbs
  • 1/4 cup butter
  • 1 can cheddar cheese soup (10 3/4 oz)
  • 8 ounces sour cream
  • 1/3 cup dry sherry

How To Make chicken cordon bleu

  • Step 1
    Split chicken breasts in half lengthwise. Place each piece between a folded sheet of waxed paper. Using a meat mallet, flatten to 1/4 inch thick.
  • Step 2
    Place 1 slice each of ham and cheese in the center of each piece of chicken breast. Roll up each chicken breast lengthwise and secure with a wooden toothpick.
  • Step 3
    Dip each roll into beaten egg and coat well with bread crumbs. In a heavy skillet, melt the butter and brown the chicken rolls. Place chicken in a 12 x 8 inch baking dish, reserving the drippings.
  • Step 4
    To the drippings, add the cheese soup, sour cream and sherry. Stir well and pour over the chicken. Bake uncovered in a 350 degree oven for 40 to 45 minutes.
