chicken, asiago & spicy mango mayo sandwich

Wanted something a little different on the grill. Chicken and mango pair well together as asiago and mango, And the spicy mango mayo is to die for. I made extra mayo for cold turkey sandwiches. With the leftover chicken I made a chicken mango salad! Enjoy!!

Ingredients

  • SPICY MAYONNAISE
  • 1 - mango sliced
  • 1 cup mayonnaise
  • 1 - jalapenos, fresh seeded
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon cumin
  • - fresh cilantro
  • CHICKEN & MARINADE
  • 2 large chicken breast
  • 1/4 cup olive oil
  • 1 tablespoon apple cider vinegar
  • - salt and pepper
  • 1/2 teaspoon cumin
  • 1-2 tablespoon fresh cilantro
  • OTHER INGREDIENTS
  • - shredded asiago cheese
  • 2 - fresh kaiser rolls
  • - red onion
  • - sliced mango

How To Make chicken, asiago & spicy mango mayo sandwich

  • Step 1
    First combine all mayo ingredients and mix together in food processor. Store in refrigerator up to a week.
  • Step 2
    Combine all marinate for chicken and add chicken to a ziplock and pour marninade over, seal and refrigerate for 4 hours. Remove, discard marinade. Grill chicken on grill till done, last few minutes cover with asiago cheese and close lid til melted.
  • Step 3
    Now build Your sandwich. First mayo, then chicken breast with melted cheese, top with red onion & mango slice (optional) & more spicy mayo!
