chicken and rice soup with veggis

Ingredients

  • 3 cloves garlic choped fine
  • 1 - onion chopped fine
  • 1 small green pepper chopped fine
  • 2 tablespoons olive oil
  • 3 cups chicken broth
  • 2 cups water
  • 1/2 cup uncooked rice
  • 1 - roasted chicken deboned cutt into bite size portions
  • 3 cups any frozen veggis( i used carrots, snow peas and boccolic
  • 2 tablespoons butter

How To Make chicken and rice soup with veggis

  • Step 1
    Cook garlic,onion,and green pepper in olive oil untill tender
  • Step 2
    Add chicken broth, and water bring to a simmer. Salt and pepper to taste
  • Step 3
    When brought to a simmer add the rice, frozen veggies and chicken. Cover and let simmer for 20 minutes. When done add the butter, stir untill melted.
  • Step 4
    I normaly top my soups and chili with crushed ritz crackers, cheese and sour cream
