8tiny white onions

1/2 cdry white wine

3 smallripe tomatoes, peeled an diced
How to Make Chicken Alpine (Switzerland)
- Combine flour and seasonings and toss with chicken in paper bag to coat pieces thoroughly.
- Brown chicken in vegetable oil in large skillet.
- Pushing chicken to one side, add onions and mushrooms and saute until light brown.
- Stir in parsley, wine, and tomatoes, and spoon over chicken pieces.
- Cover and simmer for 45 minutes, basting occasionally, until chicken is very tender.
