We had never heard of this as we were born in Montana and North Dakota. Upon moving to California many years ago, it quickly became a favorite. Always thought it was time consuming to make, but this is a very easy and quick recipe!

  • 8-10
    chicken thighs
  • 3-4 clove
    garlic, chopped
  • 1/2
    onion, chopped
  • 1/2 Tbsp
  • 1 Tbsp
    black peppercorns, whole
  • 3
    bay leaves
  • 1/2 c
    soy sauce
  • 1/2 c
    apple cider vinegar
  • ·
    water to cover

How to Make Chicken Adobo


  1. Sauté onions and garlic.
  2. Add chicken and brown both sides.
  3. Add soy sauce, vinegar, sugar, peppercorns, bay leaves.
  4. Add enough water to cover chicken.
  5. Cook over medium heat until tender. Turn heat up and boil liquid to thicken.
  6. Usually served over steamed rice. May garnish with chopped green onions (optional).
