    unsalted, untoasted cashews
  • 2
    chicken breasts, sliced lengthways
  • ·
    sea salt & cracked black peper
  • 2 Tbsp
    olive oil
  • 2
    baby romaine lettuce
  • HONEY MUSTARD DRESING

  • 1 Tbsp
    dijion mustard
  • 2 Tbsp
    honey
  • 1 Tbsp
    white vinegar

How to Make cashew chicken salad with honey mustard dressing

Step-by-Step

  1. To make the honey mustard dressing, combine the mustard, honey and vinegar in a screw top jar, shake well. Set aside
  2. Place the cashews in a food processor and process fore 2-3 minutes. Coat the chicken with the cashews, salt & pepper.
  3. Heat a medium non-stick frying pan over medium-high heat. Add the oil to the pan and cool the chicken for 2-3 minutes each side or until cooked through.
  4. To serve, toss the chicken with the lettuce and spoon over the dressing
