Ingredients For cashew chicken salad with honey mustard dressing

1 cunsalted, untoasted cashews

2chicken breasts, sliced lengthways

sea salt & cracked black peper

2 Tbspolive oil

2baby romaine lettuce
- HONEY MUSTARD DRESING

1 Tbspdijion mustard

2 Tbsphoney

1 Tbspwhite vinegar
How To Make cashew chicken salad with honey mustard dressing

1To make the honey mustard dressing, combine the mustard, honey and vinegar in a screw top jar, shake well. Set aside

2Place the cashews in a food processor and process fore 2-3 minutes. Coat the chicken with the cashews, salt & pepper.

3Heat a medium non-stick frying pan over medium-high heat. Add the oil to the pan and cool the chicken for 2-3 minutes each side or until cooked through.

4To serve, toss the chicken with the lettuce and spoon over the dressing
