unsalted, untoasted cashews
2
chicken breasts, sliced lengthways
sea salt & cracked black peper
2 Tbsp
olive oil
2
baby romaine lettuce

HONEY MUSTARD DRESING

1 Tbsp
dijion mustard
2 Tbsp
honey
1 Tbsp
white vinegar

How to Make cashew chicken salad with honey mustard dressing

Step-by-Step

  • 1To make the honey mustard dressing, combine the mustard, honey and vinegar in a screw top jar, shake well. Set aside
  • 2Place the cashews in a food processor and process fore 2-3 minutes. Coat the chicken with the cashews, salt & pepper.
  • 3Heat a medium non-stick frying pan over medium-high heat. Add the oil to the pan and cool the chicken for 2-3 minutes each side or until cooked through.
  • 4To serve, toss the chicken with the lettuce and spoon over the dressing
