Ingredients
- 1 cup unsalted, untoasted cashews
- 2 - chicken breasts, sliced lengthways
- - sea salt & cracked black peper
- 2 tablespoons olive oil
- 2 - baby romaine lettuce
- HONEY MUSTARD DRESING
- 1 tablespoon dijion mustard
- 2 tablespoons honey
- 1 tablespoon white vinegar
How To Make cashew chicken salad with honey mustard dressing

Step 1To make the honey mustard dressing, combine the mustard, honey and vinegar in a screw top jar, shake well. Set aside

Step 2Place the cashews in a food processor and process fore 2-3 minutes. Coat the chicken with the cashews, salt & pepper.

Step 3Heat a medium non-stick frying pan over medium-high heat. Add the oil to the pan and cool the chicken for 2-3 minutes each side or until cooked through.

Step 4To serve, toss the chicken with the lettuce and spoon over the dressing
