Broccoli and Chicken Casserole

This was given to me by a friend. I love to make it when we have company along with Citrus Almond Salad and Spicy Cheese Bread. Always a hit!

1 medium
whole chicken - cooked, de-boned, and chunked (i have used the frozen, skinless chicken fingers or chicken breasts that were boiled with chicken broth or bouillion, and then cut in small chunks to save time.)
2 pkg
10 oz. frozen broccoli, partially cooked
1 c
1 can(s)
cream of mushroom soup
1 can(s)
cream of chicken soup
1 Tbsp
curry powder (optional)
1 pkg
dry stuffing mix - finely crushed (i use herb and garlic.)
1 pkg
monterey jack cheese - small, shredded


1Pre-heat the oven to 350 degrees.
2Spray Pam or any spray oil in a large rectangular casserole dish.
3In a large bowl, mix the mayonnaise, soups, and curry.
4Add the partially cooked broccoli and chicken to the mixture.
5Stir well before pouring the mixture into the casserole dish.
6Sprinkle the cheese over the mixture.
7Sprinkle the crushed dry stuffing mix over the cheese.
8Bake for 30 minutes and serve hot.
