broccoli and chicken casserole

This was given to me by a friend. I love to make it when we have company along with Citrus Almond Salad and Spicy Cheese Bread. Always a hit!

Ingredients

  • 1 medium whole chicken - cooked, de-boned, and chunked (i have used the frozen, skinless chicken fingers or chicken breasts that were boiled with chicken broth or bouillion, and then cut in small chunks to save time.)
  • 2 packages 10 oz. frozen broccoli, partially cooked
  • 1 cup mayonnaise
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 tablespoon curry powder (optional)
  • 1 package dry stuffing mix - finely crushed (i use herb and garlic.)
  • 1 package monterey jack cheese - small, shredded

How To Make broccoli and chicken casserole

  • Step 1
    Pre-heat the oven to 350 degrees.
  • Step 2
    Spray Pam or any spray oil in a large rectangular casserole dish.
  • Step 3
    In a large bowl, mix the mayonnaise, soups, and curry.
  • Step 4
    Add the partially cooked broccoli and chicken to the mixture.
  • Step 5
    Stir well before pouring the mixture into the casserole dish.
  • Step 6
    Sprinkle the cheese over the mixture.
  • Step 7
    Sprinkle the crushed dry stuffing mix over the cheese.
  • Step 8
    Bake for 30 minutes and serve hot.
