This was given to me by a friend. I love to make it when we have company along with Citrus Almond Salad and Spicy Cheese Bread. Always a hit!

whole chicken - cooked, de-boned, and chunked (i have used the frozen, skinless chicken fingers or chicken breasts that were boiled with chicken broth or bouillion, and then cut in small chunks to save time.)
2 pkg
10 oz. frozen broccoli, partially cooked
1 c
1 can(s)
cream of mushroom soup
1 can(s)
cream of chicken soup
1 Tbsp
curry powder (optional)
1 pkg
dry stuffing mix - finely crushed (i use herb and garlic.)
1 pkg
monterey jack cheese - small, shredded

How to Make Broccoli and Chicken Casserole


  • 1Pre-heat the oven to 350 degrees.
  • 2Spray Pam or any spray oil in a large rectangular casserole dish.
  • 3In a large bowl, mix the mayonnaise, soups, and curry.
  • 4Add the partially cooked broccoli and chicken to the mixture.
  • 5Stir well before pouring the mixture into the casserole dish.
  • 6Sprinkle the cheese over the mixture.
  • 7Sprinkle the crushed dry stuffing mix over the cheese.
  • 8Bake for 30 minutes and serve hot.
