Ingredients
- - 8 pieces bone in skinless thighs
- - 1 link andouille sausage chopped
- - 1 onion chopped
- - 2 ribs of celery chopped
- - 1 green pepper chopped
- - 2 to 3 cloves garlic chopped or grated
- - 2 tablespoons fresh thyme chopped
- - 1 large tablespoons flour
- - 1 12 oz bottle beer
- - 1 can diced tomatoes (rotel)
- - 1 cup chicken stock
- - 2 tablespoons hot sauce
- - scallions white a d green for garnish
How To Make beer braised chicken thighs

Step 1Pat thighs dry and season with salt and pepper. Heat extra virgin olive oil in Dutch oven over medium heat, add and brown the chicken on both sides.

Step 2Remove and spoon out some drippings, add sausage. Brown and than add onion, celery, pepper, garlic and thyme and cook till soften. Approximately 10 minutes.

Step 3Add the flour, stir to mix, and then pour in beer and let foam subside, Stir in tomatoes, stock, and hot sauce. Let the stock thicken a bit and then add chicken and simmer to cook through.
