beer braised chicken thighs

Great as a make ahead meal. I usually make this with egg noodles.

Ingredients

  • - 8 pieces bone in skinless thighs
  • - 1 link andouille sausage chopped
  • - 1 onion chopped
  • - 2 ribs of celery chopped
  • - 1 green pepper chopped
  • - 2 to 3 cloves garlic chopped or grated
  • - 2 tablespoons fresh thyme chopped
  • - 1 large tablespoons flour
  • - 1 12 oz bottle beer
  • - 1 can diced tomatoes (rotel)
  • - 1 cup chicken stock
  • - 2 tablespoons hot sauce
  • - scallions white a d green for garnish

How To Make beer braised chicken thighs

  • Step 1
    Pat thighs dry and season with salt and pepper. Heat extra virgin olive oil in Dutch oven over medium heat, add and brown the chicken on both sides.
  • Step 2
    Remove and spoon out some drippings, add sausage. Brown and than add onion, celery, pepper, garlic and thyme and cook till soften. Approximately 10 minutes.
  • Step 3
    Add the flour, stir to mix, and then pour in beer and let foam subside, Stir in tomatoes, stock, and hot sauce. Let the stock thicken a bit and then add chicken and simmer to cook through.
