8 pieces bone in skinless thighs
1 link andouille sausage chopped
1 onion chopped
2 ribs of celery chopped
1 green pepper chopped
2 to 3 cloves garlic chopped or grated
2 tablespoons fresh thyme chopped
1 large tablespoons flour
1 12 oz bottle beer
1 can diced tomatoes (rotel)
1 cup chicken stock
2 tablespoons hot sauce
scallions white a d green for garnish

How to Make Beer Braised Chicken Thighs


  • 1Pat thighs dry and season with salt and pepper. Heat extra virgin olive oil in Dutch oven over medium heat, add and brown the chicken on both sides.
  • 2Remove and spoon out some drippings, add sausage. Brown and than add onion, celery, pepper, garlic and thyme and cook till soften. Approximately 10 minutes.
  • 3Add the flour, stir to mix, and then pour in beer and let foam subside, Stir in tomatoes, stock, and hot sauce. Let the stock thicken a bit and then add chicken and simmer to cook through.
