beef burr-adas

I was experimenting last night, & came up with this dish. Wasn't sure what to call it, because it could be an echilada or a wet burrito. All I know is that it turned out really good. My sister in law suggested burr-adas, so wa-la! LOL!

Ingredients For beef burr-adas

  • 1-1/2 lb
    ground beef
  • 8 oz
    cream cheese
  • 1 can
    smashed black beans (bush's)
  • 8
    flour tortillas, burrito size
  • 1 1/2 c
    medium salsa(pace)
  • 3/4 c
    meduim taco sauce
  • 1 md
    onion,diced
  • 1/21 Tbsp
    cumin
  • 1/2 Tbsp
    black pepper
  • 1 Tbsp
    chili powder
  • 1/2 Tbsp
    mexican hot chili powder
  • 1/4 tsp
    cayenne pepper
  • 1 c
    shredded mexican cheese

How To Make beef burr-adas

    Preheat oven to 400.

    Brown beef with onions & spices until no longer pink. Drain.

    While thats working, dice cream cheese into a microwave safe bowl & add 1/2 cup of salsa & 1/4 cup taco sauce. Stir to combine. Microwave for 1-2 minutes just to heat enough to melt cream cheese. Stir well. Add to beef mixture & mix well.

    Warm tortillas in microwave for 1 minute in damp paper towel to make them easier to roll.

    Spray 9X13 casserole dish with cooking spray. Add remaining taco sauce to bottom of pan.

    Spread smashed bean on 1/3 of tortilla. Add meat mixure across beans. Roll & lay seam side down in pan.

    Add remaing salsa over rolls. Sprinkle cheese over all.

    Bake uncovered for 20 minutes, until heated through & cheese is melted. Allow to rest for 5-10 minutes before serving. Serve with your choice of toppings. (We had diced avocado & sour cream.) Enjoy!
