I was experimenting last night, & came up with this dish. Wasn't sure what to call it, because it could be an echilada or a wet burrito. All I know is that it turned out really good. My sister in law suggested burr-adas, so wa-la! LOL!

How to Make Beef Burr-adas

Step-by-Step

  1. Preheat oven to 400.
  2. Brown beef with onions & spices until no longer pink. Drain.
  3. While thats working, dice cream cheese into a microwave safe bowl & add 1/2 cup of salsa & 1/4 cup taco sauce. Stir to combine. Microwave for 1-2 minutes just to heat enough to melt cream cheese. Stir well. Add to beef mixture & mix well.
  4. Warm tortillas in microwave for 1 minute in damp paper towel to make them easier to roll.
  5. Spray 9X13 casserole dish with cooking spray. Add remaining taco sauce to bottom of pan.
  6. Spread smashed bean on 1/3 of tortilla. Add meat mixure across beans. Roll & lay seam side down in pan.
  7. Add remaing salsa over rolls. Sprinkle cheese over all.
  8. Bake uncovered for 20 minutes, until heated through & cheese is melted. Allow to rest for 5-10 minutes before serving. Serve with your choice of toppings. (We had diced avocado & sour cream.) Enjoy!
