Barbecued Roasted Chicken with Parmesan Potatoes

An easy, great barbecued, flavorful chicken without grilling. It's oven-roasted in just under an hour. One dish, low fat meal.

  • 1 lb
    small red potatoes (about 8), quartered
  • 1/4 c
    italian vinaigrette dressing
  • 1 tsp
    chili powder
  • 1 lb
    4 small boneless, skinless chicken breasts
  • 1/4 c
    barbecue sauce
  • 2 Tbsp
    grated parmesan cheese

How to Make Barbecued Roasted Chicken with Parmesan Potatoes


  1. Toss potatoes with dressing in 13 X 9 inch nonstick pan; sprinkle with 1/2 tsp. chili powder.
    Bake 25 minutes, at 400 degrees.
  2. Stir potatoes; push to sides of pan.
    Place chicken in single layer in center of pan; sprinkle with remaining chili powder.
    Drizzle with barbecue sauce.
  3. Bake 20-30 minutes or until chicken is done (165 degrees) and potatoes are tender.
    Transfer chicken to platter.
    Stir potatoes to evenly coat with pan drippings.
    Spoon around chicken on platter; top with Parmesan.
  4. Using one pan to roast the potatoes along with the chicken makes for speedy cleanup.
