These were so good..our son was here for lunch and said,"I usually don't like Honey BBQ sauce, but this has a good flavor", who would have thought...anyway he ate 2! These are very filling...and a little messy--but oh so delicious. Hope you like them...

  • 2 small
    boneless, skinless chicken breasts, chop in small pieces
  • 1 small
    onion, diced
  • 1 tsp
    each of dried basil and garlic powder with parsley
  • 1/4 c
    honey bbq sauce or your favorite
  • 1 1/2 Tbsp
    brown sugar, divided
  • 1 1/2 Tbsp
  • 1/4 c
    salsa, you choose the heat
  • 6
    flour tortillas, medium size
  • 1/2 c
    petite cut tomatoes,well drained or use a small fresh tomato,diced
  • 1/2 c
    shredded colby jack cheese

How to Make Bar B Q Chicken Quesadillas


  1. Preheat oven to 350^. Cover cookie sheet with non-stick foil;set aside.
  2. In a large skillet, coated with cooking oil, stir fry the chicken pieces until cooked through. Add the onion and sprinkle the chicken pieces and onion with the garlic powder and basil then sprinkle with the 1/2 Tablespoon brown sugar. Stir to blend together.
  3. In a medium bowl add the BBQ sauce, remaining brown sugar, molasses and salsa;Whisk well.
  4. Add chicken mixture to the BBQ sauce mixture, toss to blend.
  5. Add some of the chicken mixture on 1/2 of each tortilla. to
  6. Top chicken mixture with tomato.
  7. Sprinkle cheese over all. Fold over. Use toothpick if necessary to close.
  8. Place on prepared cookie sheet. Bake about 5 minutes or just until cheese melts.
