I used to make this when my kids were younger. I wanted something healthier than fried chicken. We all loved it. I started doing it with chicken legs only (pic is a half batch, I live alone). The leftovers are great for cold lunches or picnics. The original recipe called for a whole chicken, cut up. That's an "older" recipe. Now I feel old. Anywho,I think modifying with legs and extending the cooking time, makes it unique.

Ingredients

  • 2-3 pounds chicken legs
  • 2 - eggs, slightly beaten
  • 1/2 cup orange juice, fresh
  • 1 1/2 cups cracker meal
  • 1 tablespoon paprika
  • 1 tablespoon shredded orange peal
  • 6 tablespoons butter

How To Make baked orange chicken

  • Step 1
    Rinse chicken, pat dry. Melt butter in 9x13 baking dish in 400 degree oven. Remove pan from oven.
  • Step 2
    Dip chicken legs into mixture of egg and orange juice, then into mixture of cracker meal, paprika, peel and 1 teaspoon salt. Turn chicken in butter to coat; arrange skin side down (don't crowd).
  • Step 3
    Bake at 400 for 30 minutes. Turn chicken. Bake 30 minutes. Turn chicken one more time, bake an additional 15 minutes.
