THIS CAME OUT WONDERFUL! I WANTD TO DO SOMETHING DIFFERENT WITH MY DEFROSTD CHICKN BREAST SO THIS WAS WAT I DECIDED ...BACON WRAPD RICOTTA/SPINACH STFTD CHICKEN BREAST W/WHITE WINE SAUCE....IT TAKES A LIL WORK TO PREPARE N SAY...TASTY N FILLING :)

PLUS I GOT TO USE UP A CONTAINER OF RICOTTA THAT WAS IN THE FRIDGE ;)

Ingredients

  • 2 large
    boneless chickn breast, flattend between 1/4-1/2"
  • 1 c
    ricotta & 1 egg (oops almost forgot to add to my ingredient list)
  • 1 box
    chpd spinach, defrosted n squeezd dry 10 oz
  • 2 clove
    roastd garlic, chpd....( or 1 tsp garlic powder)
  • 1/4 c
    parmesan cheese
  • 2 Tbsp
    veg oil
  • 1/4 tsp
    blk pepper
  • 1/4 tsp
    salt
  • 4 slice
    bacon
  • SAUCE

  • 3/4 c
    white wine
  • 1 c
    chickn broth
  • 2 Tbsp
    dijon mustard
  • 2 tsp
    flour
  • ·
    s n p to taste
  • 1 tsp
    parsley, chpd

How to Make BACN WRPD RICOTTA/SPNCH STUFTD CHICKN BREAST

Step-by-Step

  1. IN A BOWL COMBINE RICOTTA, SPINACH, PARMESAN CHEESE, EGG N ROASTED GARLIC (OR GARLIC POWDR) SET ASIDE
  2. IN THE CENTER OF EACH FLATTEND CHICKEN BREAST PUT ABOUT 1/2-3-4 CUP OF RICOTTA/SPINACH MIXTURE.
  3. ROLL UP TIGHTLY N BRING IN SIDES OF CHICKEN BREAST THEN CONTINUE TO ROLL UP (LIKE A PKG) SnP CHICKN ... NOW TAKE BACON N WRAP AROUND CHICKN BUNDLES N SECURE WITH TOOTHPICKS. SET ASIDE FOR A MOMENT
  4. IN A SMALL SAUCEPAN ADD 1 TBLSPN OF VEG OIL TO THAT ADD FLOUR COOK FOR A MINUTE THEN ADD WINE N COOK FOR 2 MINUTES. NEXT ADD MUSTARD N BROTH N BRING TO A BOIL THEN SIMMER FOR 5 MINUTES N ADD CHPD PARSLEY N SnP TO TASTE. SET ASIDE
  5. IN A LARGE SAUTÉ PAN ADD VEG OIL MED/HIGH HEAT N ADD BACON WRAPPD CHICKN N COOK FOR 3 MINUTES THEN FLIP N COOK FOR 3 MORE MINUTES. SLIGHTLY COVER PAN N TURN ONE MORE TIME COOKN TILL NICELY BROWNED N COOKED THRU AN ADDITIONAL 5 MINUTES
  6. REMOVE CHICKEN N LET REST ON CUTTN BOARD FOR A FEW MINUTES.
  7. TAKE SAUCE MIXTURE N POUR INTO SAUTÉ PAN N MIX WITH DRIPPINGS...WARM UP (MMMM GOOD BACON GREASE)
  8. SLICE CHICKEN BUNDLES N POUR ON SAUCE...ENJOY :)
