This was a dish I came up with when I needed to use a bottle of artichoke hearts and a package of chicken. My entire family loved it!

Ingredients

  • 2 c
    marinated artichoke hearts
  • 4 large
    chicken breasts, boneless and skinless
  • 1 pkg
    monterey jack cheese
  • 1 Tbsp
    mayonnaise
  • 1 tsp
    dijon mustard
  • 3 sprig(s)
    parsley
  • 1 box
    italian bread crumbs

How to Make Artichoke Chicken

Step-by-Step

  1. In a food processor add drained marinated artichoke hearts, mustard, mayonaise, cheese and parsley and blend to between a coarse and smooth mixture.
  2. Filet chicken breasts and stuff with mixture.
  3. Roll in bread crumbs, totally covering chicken and place in oven on a baking sheet. You may want to use toothpicks to hold together. Bake at 375 until chicken is done. Add salt and pepper to taste.
