This was a dish I came up with when I needed to use a bottle of artichoke hearts and a package of chicken. My entire family loved it!

Ingredients

  • 2 cups marinated artichoke hearts
  • 4 large chicken breasts, boneless and skinless
  • 1 package monterey jack cheese
  • 1 tablespoon mayonnaise
  • 1 teaspoon dijon mustard
  • 3 sprigs parsley
  • 1 box italian bread crumbs

How To Make artichoke chicken

  • Step 1
    In a food processor add drained marinated artichoke hearts, mustard, mayonaise, cheese and parsley and blend to between a coarse and smooth mixture.
  • Step 2
    Filet chicken breasts and stuff with mixture.
  • Step 3
    Roll in bread crumbs, totally covering chicken and place in oven on a baking sheet. You may want to use toothpicks to hold together. Bake at 375 until chicken is done. Add salt and pepper to taste.
