artichoke chicken
This was a dish I came up with when I needed to use a bottle of artichoke hearts and a package of chicken. My entire family loved it!

Ingredients
- 2 cups marinated artichoke hearts
- 4 large chicken breasts, boneless and skinless
- 1 package monterey jack cheese
- 1 tablespoon mayonnaise
- 1 teaspoon dijon mustard
- 3 sprigs parsley
- 1 box italian bread crumbs
How To Make artichoke chicken

Step 1In a food processor add drained marinated artichoke hearts, mustard, mayonaise, cheese and parsley and blend to between a coarse and smooth mixture.

Step 2Filet chicken breasts and stuff with mixture.

Step 3Roll in bread crumbs, totally covering chicken and place in oven on a baking sheet. You may want to use toothpicks to hold together. Bake at 375 until chicken is done. Add salt and pepper to taste.
