Omg these are so amazing I cant eat alot of beef so I play with chicken alot! Just the mix alone can be used for soooo many things and these are so good huge hit at home and we love mexican food. I started with slow cooker and ended in a skillet at the time I dont have an oven so make due where I can!
1Slow cook chicken in chicken broth and two packages of sazon seasoning packets. Sazon is a mexican seasoning gives color and flavor. Add in 1/4 cup of taco seasoning cook until trnders fall apart and can be shredded with a fork.
2Line the tort. shell with cooked rice Once chicken is shredded add all left over ingredients and stir in with the chicken put as much as you want into the enchilada shell leaving space to roll up. Because I did not have an.oven when I made these I used my skillet but a 9x13 pan sprayed or greased works just as well to cook them in on 350 degrees.
3Once rolled and placed in the pan pour over top a can of green verde sauce and cheese bake until gold.
