amazing chicken enchiladas

Omg these are so amazing I cant eat alot of beef so I play with chicken alot! Just the mix alone can be used for soooo many things and these are so good huge hit at home and we love mexican food. I started with slow cooker and ended in a skillet at the time I dont have an oven so make due where I can!

Ingredients

  • 3 pounds chicken tenderloins
  • 2/8oz can green verde sauce/ one can of sauce is used in the mix the other is to top with cheese before placing in the oven.
  • 5oz packages cream cheese
  • 1/4 cup sour cream
  • 1/4 teaspoon cumin
  • 3 - green onions chopped
  • 1/2 teaspoon chili powder
  • 1/4 cup taco seasoning mix
  • 2 packages sazon seasoning
  • 1 can chicken broth plus 1/2 can of water
  • - salt and pepper to taste
  • 8/10 - flour tortillas
  • 8oz packages mexican blend shredded cheese for top before placing in the oven.
  • 2 cups cooked rice

How To Make amazing chicken enchiladas

  • Step 1
    Slow cook chicken in chicken broth and two packages of sazon seasoning packets. Sazon is a mexican seasoning gives color and flavor. Add in 1/4 cup of taco seasoning cook until trnders fall apart and can be shredded with a fork.
  • Step 2
    Line the tort. shell with cooked rice Once chicken is shredded add all left over ingredients and stir in with the chicken put as much as you want into the enchilada shell leaving space to roll up. Because I did not have an.oven when I made these I used my skillet but a 9x13 pan sprayed or greased works just as well to cook them in on 350 degrees.
  • Step 3
    Once rolled and placed in the pan pour over top a can of green verde sauce and cheese bake until gold.
