This was inspired by a recipe for African Beans with a coconut-tomato sauce which we liked very much.

Ingredients

  • 1 pound chicken breasts, boneless and skinless
  • 1 medium zucchino
  • 1 medium eggplant
  • 1 - red bell pepper
  • 1 - yellow bell pepper
  • 1 clove garlic
  • 1 - shallot
  • 1 medium tomato
  • 1 medium sweet potato
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika, sweet mild
  • 1/2 teaspoon chili or cayenne
  • 1/4 teaspoon black pepper
  • 1 can creamy coconut milk, unsweetened
  • 1 teaspoon salt
  • 1 tablespoon brown sugar

How To Make african style chicken and vegetables

  • Step 1
    Cube the chicken and brown with a tablespoon of coconut oil or other cooking oil in a large skillet.
  • Step 2
    While meat is browning, chop shallot and mince garlic, cube all the vegetables.
  • Step 3
    Remove the browned chicken from skillet and fry shallot and garlic until lightly brown, add spices, sugar and tomato paste, stir until sugar has melted and add cubed tomato.
  • Step 4
    Fry for two minutes, then add cubed sweet potato, fry two more minutes, then add all the other vegetables and the salt. Fry for two or three minutes, then add coconut milk.
  • Step 5
    Bring to a boil, cover and boil for 15-20 minutes or until sweet potatoes are soft.
  • Step 6
    Add chicken, mix well, heat through and then serve.
