a yorkshireman's vacation
My husband based this off of my Yorkshire Chicken recipe (he improved it). This was Amazing! Funny tidbit: There is an old British saying that "a Yorkshireman is a Scotsman with all the generosity squeezed out of him". LOL

Ingredients
- 3 - chicken drumsticks
- 3 - chicken thighs
- MARINADE:
- 1 large can pineapple slices, save juice in a large ziplock bag
- 2 tablespoons soy sauce
- 2-3 tablespoons ketchup
- 1 clove garlic, crushed
- 1/2 tablespoon fresh ginger, chopped (or 1 tsp powdered ginger)
- PUDDING:
- 1 cup flour
- 1 teaspoon baking powder
- 4 - eggs
- 1 cup milk
- 1 teaspoon cinnamon
- 1 teaspoon ginger, ground
- 1/4 cup butter, melted **
How To Make a yorkshireman's vacation

Step 1Take pineapple slices from can, set aside.

Step 2In a large ziplock bag, add juice from pineapple can and the rest of the marinade ingredients. Mix well.

Step 3Add chicken pieces to the ziplock bag and marinate in the refrigerator for at least 4 hours, or overnight.

Step 4Preheat oven to 350.

Step 5Place chicken in sprayed baking dish, or 2 if you need the room, with space between pieces. Add a pineapple slice on top of each chicken piece. Discard marinade.

Step 6Chop up remaining pineapple rings to go into the pudding.

Step 7In a mixing bowl, combine the Pudding ingredients. Whip vigorously with a whisk attachment to add air. ** If using boneless, skinless chicken breasts, add the melted butter to the pudding to compensate for the difference in fat content. (without the skin, and using white meat the pudding could be a bit dry if the butter is not added)

Step 8Add in the chopped pineapple, and pour over chicken pieces.

Step 9Bake at 350 for 1 hour, or until pudding is a nice golden brown & puffy.
