Ingredients
- 1 pound ground venison
- 1 cup rice, uncooked
- 1 small onion, chopped
- 2 tablespoons shortening
- 1 can mushroom stems and pieces, drained
- 1 teaspoon salt
- 2 cups tomato juice
- 1 1/2 cups boiling water
- 1 cup cheddar cheese, grated
How To Make venison rice casserole

Step 1Cook venison, onion, and rice in shortening until lightly browned. Add mushrooms, salt, tomato juice and boiling water. Bake in a greased casserole, covered, at 350 degrees for one hour. Uncover dish and sprinkle with cheese. Return to oven until cheese melts (about 7 - 10 minutes).
