I wanted to try a different mac and cheese casserole and had all kinds of cheese on hand, so I made this. It is so delicious!!

Ingredients

  • 8 ounces penne pasta
  • 4 ounces brie cheese
  • 3/4 cup grated gruyere cheese
  • 3/4 cup shredded sharp white cheddar cheese
  • 4 tablespoons unsalted butter
  • 2 tablespoons flour
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon dried sage
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon ground nutmeg
  • 2 cups milk
  • - salt and pepper to taste
  • 3/4 cup plain bread crumbs

How To Make unbeleivable french style mac & cheese

  • Step 1
    Heat oven to 375. Spray a 9" x 13" casserole dish w/ cooking spray. Cook pasta as directed, drain. return to pot. Scrape rind off of brie cheese and chop finely. In bowl, combine brie, gruyere and cheddar cheeses. Reserve 1/2 cup.
  • Step 2
    Heat 2 tbsp butter in pot over med-low heat. Stir in flour. Cook 1 min, stirring constantly. Stir in rosemary, sage, thyme and nutmeg. Increase heat to medium. Whisk in milk, slowly. Bring to a boil. Reduce heat to low. Simmer 2 mins.
  • Step 3
    Add cheese to sauce, stirring until cheese melts. Pour sauce over pasta. Season w/ salt and pepper to your liking. Pour into casserole dish. Heat remaining butter in skillet, over medium heat. Add bread crumbs and cook 2 mins, stirring often. Combine bread crumbs w/ reserved cheeses. Sprinkle over pasta mix. Bake about 20 mins or until sauce is bubbly.
