spicy chicken pasta bake
This was so good I couldn't stop eating it. Its got a little kick but you can cool it down, by taking the peppers out for the kids. You can also use rice instead of the pasta.

Ingredients
- 3 cups cooked pasta i used small egg noodles
- 1 small bell pepper chopped fine
- 1 small onion chopped fine
- 2 tablespoons olive oil
- 2 cloves garlic chopped fine
- 2 cups fresh spinach
- 1 can cream of chicken soup
- 1/2 cup milk
- 1 can rotel orginal or mild
- 1/2 cup sour cream
- 1/2 cup velvetta cheese diced
- 2 cups shredded cheese any kind ( chedder-pepper jack
- 2 tablespoons jalapeno peppers chopped
- 2 cups cooked chicken cut into bite size pieces
- - salt and pepper to taste
How To Make spicy chicken pasta bake

Step 1Cook pasta as directed but cook under one minute. Drain and set aside.

Step 2Cook bell pepper, onion and garlic in olive oil until tender. add spinach and cook another 2 minutes and set aside.

Step 3In large bowl combine soup, milk, rotel, sour cream, velvetta cheese, 1/2 cup shredded cheese, jalapeno peppers, salt and pepper. Mix well and add the pasta, spinach mixture and your diced chicken.

Step 4Pour everything into a buttered 9x13 pan. Sprinkle the remaining 11/2 cups shredded cheese over the top and bake at 350 for 40 minutes.
