spanish chicken casserole
Personally, I love Spanish dishes & decided I had to create one of my own. I just kept on making it up as I went along & wa-lah!

Ingredients
- 2 boxes spanish rice
- 1 pound chicken breast
- 2 cans stewed or diced tomatoes
- 2 cups shredded mozzarella cheese
- 5 tablespoons chilli powder
- 3 tablespoons mesquite seasoning
- 1/2 stick butter
How To Make spanish chicken casserole

Step 1Make boxes of Spanish rice as directed.

Step 2Dice chicken breast into approx. 1 inch cubes.

Step 3Melt butter in a frying pan & add chicken.

Step 4While chicken is cooking, sprinkle chilli powder & mesquite seasoning over it,making sure it gets on all the chicken.

Step 5Preheat oven to 350°F.

Step 6When chicken is cooked thoroughly, take a 13 × 9 inch GREASED pan.

Step 7Spread rice evenly in the pan, making the first layer. Then add seasoned chicken as second layer.

Step 8Add the 2 cans of diced or stewed tomatoes to make the final layer, then top with the shredded cheese.

Step 9Bake for approx. 10-15 minutes or until cheese is melted.
