  • 1/2 c
    prepared caesar salad dressing
  • 4
    boneless skinless chicken breasts cubed
  • 6 slice
  • 8 oz
    fresh mushrooms chopped
  • 1 large
    onion chopped
  • 4 clove
    garlic minced
  • 4 Tbsp
  • 6 Tbsp
  • 3 c
    chicken broth
  • 2 c
    heavy cream
  • 2 c
    gruyere cheese grated
  • 1/4 c
    parsley chopped
  • ·
    salt and pepper
  • 1 lb
    angel hair pasta cooked and drained

How to Make Smothered Chicken Casserole


  1. Marinate the chicken in the Caesar dressing 6 hours or overnight. Cook bacon and remove with slotted spoon to a paper towel. Reserve the bacon grease.
  2. Remove chicken from dressing and shake off any excess discard the dressing. Cook chicken in bacon grease until browned. Place chicken in a greased casserole dish.
  3. Add the butter to the pan and saute the onions, mushrooms, and garlic until softened. Stir in the flour and make a roux.
  4. Stir in the chicken broth and the cream. cook until thickened. Remove from heat and stir in the remaining ingredients except pasta. Season to taste.
  5. Pour over chicken in casserole. Bake at 350 degrees for about 20 to 25 minutes. Serve over pasta.
  6. Tip
    This is great over egg noodles also.
