smokey mac and cheese
I had some leftover cheeses from a party and came up with this. There is just enough smokey flavor. You may add salt to taste. I found with the smokey cheese that it didn't require much.

Ingredients
- 1 1/2 cups smoked gouda cheese, grated
- 1 1/2 cups plain gouda cheese, grated
- 1 cup cheddar cheese, grated
- 1 pound large size creamettes macaroni
- 1/2 cup butter
- 1/3 cup flour
- 2 teaspoons dry mustard
- 1/4 teaspoon cayenne pepper
- 5 cups milk
- 1 cup plain breadcrumbs or crushed ritz crachers
- 1/2 teaspoon ground pepper
- - salt to taste
How To Make smokey mac and cheese

Step 1Cook macaroni according to directions till al dente and drain. Set aside. Preheat oven to 350. Spray a 9x13 pan with cooking spray.

Step 2In a large saucepan (4 quart) melt butter over med heat. Stir in flour, cayenne, ground pepper and mustard. Gradually stir in milk. Cook and stir mixture until it thickens and starts to bubble. Remove from heat and stir in 3 cups of the cheese. Stir until melted. Combine sauce with macaroni.

Step 3Pour into 9x13 pan. Sprinkle with remaining cheese and breadcrumbs. Bake 40 minutes or until hot and bubbly. Let Stand 10 minutes
