This Mexican casserole can be cooked in 3 hours on high or 5 hours on low.

Slow Cooker Crock Pot


  • 1 medium
    sweet onion, chopped
  • 1 medium
    green or red bell pepper, finely chopped
  • 2 tsp
    prepared minced garlic, or 2 garlic cloves minced
  • 1 large
    can crushed tomatoes (about 2 cups)
  • 3/4 c
    brown rice
  • 2 tsp
    chili powder
  • 1 Tbsp
    dried oregano

How to Make Slow Cooker Mexican Casserole


  1. Stir the ingredients together and pour into the slow cooker.
  2. Cook for 3 hours on high or 5 hours on low.
  3. Garnish with sour cream and/or grated cheese if desired.
