- 1 medium sweet onion, chopped
- 1 medium green or red bell pepper, finely chopped
- 2 teaspoons prepared minced garlic, or 2 garlic cloves minced
- 1 large can crushed tomatoes (about 2 cups)
- 3/4 cup brown rice
- 2 teaspoons chili powder
- 1 tablespoon dried oregano
