  • ·
    ¾ medium onion, diced
  • ·
    ¼ cup smart balanced omega oil
  • ·
    1 small zucchini, cut into ¼-inch cubes
  • ·
    1 clove garlic, finely chopped
  • ·
    1 small green bell pepper, cut into small pieces
  • ·
    2 tomatoes, peeled and coarsely chopped
  • ·
    ¾ small eggplant, peeled and cubed
  • ·
    ½ tsp basil
  • ·
    ½ tsp oregano

How to Make Ratatouille


  1. Sauté onion in oil in a large skillet until transparent. Add all remaining ingredients. Cover and cook over medium heat for about 45 minutes, stirring occasionally. Add a little water if necessary. May be served hot or chilled.
