Ingredients
- - ¾ medium onion, diced
- - ¼ cup smart balanced omega oil
- - 1 small zucchini, cut into ¼-inch cubes
- - 1 clove garlic, finely chopped
- - 1 small green bell pepper, cut into small pieces
- - 2 tomatoes, peeled and coarsely chopped
- - ¾ small eggplant, peeled and cubed
- - ½ tsp basil
- - ½ tsp oregano
How To Make ratatouille

Step 1Sauté onion in oil in a large skillet until transparent. Add all remaining ingredients. Cover and cook over medium heat for about 45 minutes, stirring occasionally. Add a little water if necessary. May be served hot or chilled.
