Ingredients

  • - ¾ medium onion, diced
  • - ¼ cup smart balanced omega oil
  • - 1 small zucchini, cut into ¼-inch cubes
  • - 1 clove garlic, finely chopped
  • - 1 small green bell pepper, cut into small pieces
  • - 2 tomatoes, peeled and coarsely chopped
  • - ¾ small eggplant, peeled and cubed
  • - ½ tsp basil
  • - ½ tsp oregano

How To Make ratatouille

  • Step 1
    Sauté onion in oil in a large skillet until transparent. Add all remaining ingredients. Cover and cook over medium heat for about 45 minutes, stirring occasionally. Add a little water if necessary. May be served hot or chilled.
