Another really good recipe that I have been making for years. My son really loved them as a kid and still does. He makes them now for my grandchildren. Again this super easy recipe comes from the "Better Homes and Gardens" cookbook c1969 I have added one extra ingredient to this recipe "garlic cloves" Please give it a try. Great with baked potatoes. Oh yes, I still make this recipe today for my husband and I.

Ingredients

  • - 1 beaten egg
  • - 1 103/4 oz.can of condensed tomato soup
  • - 1/4 cup uncooked long grain rice
  • - 2 tbsp finely chopped onion
  • - 2 garlic cloves finely chopped (optional)
  • - 1 tbsp snipped parsley
  • - 1/2 tsp salt
  • - dash of pepper
  • - 1 lb lean ground beef (i use 1 l/2 lbs)
  • - 1 tsp worchestershire sauce

How To Make porcupine meatballs

  • Step 1
    Combine egg, 1/4 cup of the tomato soup, and next 5 ingredients add chopped garlic cloves if using
  • Step 2
    Add beef; Mix well
  • Step 3
    Shape into 20 meatballs
  • Step 4
    Place in skillet
  • Step 5
    Mix remaining soup, 1/2 cup of water and Worchestershire sauce
  • Step 6
    Pour over meatballs
  • Step 7
    Bring to a boil; reduce heat
  • Step 8
    Simmer covered, for 40 minutes, stirring often
  • Step 9
    Makes 4 or 5 servings Enjoy!
