Bubba loves cornbread so I try to make it every chance I get. Using it in recipes is even better.

Ingredients

2 c
cornmeal
3 c
milk
1 c
lard or shortening, melted
2 large
eggs
1 can(s)
corn, drained
1 medium
onion, chopped

jalapeno peppers, chopped
2 1/2 dash(es)
flour
4 1/2 tsp
baking powder
1 tsp
salt
1 1/2 dash(es)
grated colby cheese
1 lb
ground buffalo or ground beef
1 pkg
taco seasoning mix

How to Make Mexican Cornbread Dinner

Step-by-Step

  • 1Preheat oven to 350 degrees. Lightly grease a 13x9-inch cake pan.
  • 2Cook ground buffalo and onion until buffalo is browned. Drain. Add corn and set aside.
  • 3Mix eggs, milk, and melted lard or shortening.
  • 4Add cornmeal, flour, baking powder, salt and taco seasoning mix.
  • 5Mix thoroughly and add meat mixture and grated cheese.
  • 6Pour into the baking pan and bake for 35 to 45 minutes or until springy. Good served with Carrie's Pintos

    NOTE: Recipe may be cut in half. Can be frozen.
