Ingredients

1 – 1 ½ l lbground beef

1 smallonion
-
1 clovegarlic, mincerd

1 Tbspworcestershire sauce
-
1 16oz can(s)refried beans

1 can(s)chopped chilis
-
2 can(s)red enchilada sauce
-
1 tspground cumin
-
1 tspground cilantro
-
1 pkgmonterey jack cheese
-
1 pkgmonterey jack cheese with jalapeno peppers

How to Make Enchilada Casserole
- Saute onion, peppers and garlic until softened
- Add beef and Worcestershire sauce (to taste), cumin and cilantro and brown, drain.
- Add can of beans and some of the enchilada sauce. Heat through
- Line bottom of a casserole dish with tortillas and pour on some of the enchilada sauce. Add a layer of the meat mixture and a layer of jack (or cheddar) cheese to cover, add some sauce and another layer of tortillas. Add the second layer of meat mixture (using it all) and a layer of pepper jack cheese to cover. Pour on remaining sauce
- Bake in 400 degree oven for 20 minutes or until cheese is melted and bubbly. Serve with sour cream and if you have it, guacamole.
