Ingredients
- 1 – 1 ½ l pounds ground beef
- 1 small onion
- 1 clove garlic, mincerd
- 1 tablespoon worcestershire sauce
- 1 16oz cans refried beans
- 1 can chopped chilis
- 2 cans red enchilada sauce
- 1 teaspoon ground cumin
- 1 teaspoon ground cilantro
- 1 package monterey jack cheese
- 1 package monterey jack cheese with jalapeno peppers
- - corn tortillas
How To Make enchilada casserole

Step 1Saute onion, peppers and garlic until softened

Step 2Add beef and Worcestershire sauce (to taste), cumin and cilantro and brown, drain.

Step 3Add can of beans and some of the enchilada sauce. Heat through

Step 4Line bottom of a casserole dish with tortillas and pour on some of the enchilada sauce. Add a layer of the meat mixture and a layer of jack (or cheddar) cheese to cover, add some sauce and another layer of tortillas. Add the second layer of meat mixture (using it all) and a layer of pepper jack cheese to cover. Pour on remaining sauce

Step 5Bake in 400 degree oven for 20 minutes or until cheese is melted and bubbly. Serve with sour cream and if you have it, guacamole.
