enchilada casserole

My family demands this on Christmas day. It is my own and it is delicious and easy.

Ingredients

  • 1 – 1 ½ l pounds ground beef
  • 1 small onion
  • 1 clove garlic, mincerd
  • 1 tablespoon worcestershire sauce
  • 1 16oz cans refried beans
  • 1 can chopped chilis
  • 2 cans red enchilada sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cilantro
  • 1 package monterey jack cheese
  • 1 package monterey jack cheese with jalapeno peppers
  • - corn tortillas

How To Make enchilada casserole

  • Step 1
    Saute onion, peppers and garlic until softened
  • Step 2
    Add beef and Worcestershire sauce (to taste), cumin and cilantro and brown, drain.
  • Step 3
    Add can of beans and some of the enchilada sauce. Heat through
  • Step 4
    Line bottom of a casserole dish with tortillas and pour on some of the enchilada sauce. Add a layer of the meat mixture and a layer of jack (or cheddar) cheese to cover, add some sauce and another layer of tortillas. Add the second layer of meat mixture (using it all) and a layer of pepper jack cheese to cover. Pour on remaining sauce
  • Step 5
    Bake in 400 degree oven for 20 minutes or until cheese is melted and bubbly. Serve with sour cream and if you have it, guacamole.
