Ingredients

  • 1 – 1 ½ l lb
    ground beef
  • 1 small
    onion
  • 1 clove
    garlic, mincerd
  • 1 Tbsp
    worcestershire sauce
  • 1 16oz can(s)
    refried beans
  • 1 can(s)
    chopped chilis
  • 2 can(s)
    red enchilada sauce
  • 1 tsp
    ground cumin
  • 1 tsp
    ground cilantro
  • 1 pkg
    monterey jack cheese
  • 1 pkg
    monterey jack cheese with jalapeno peppers
  • ·
    corn tortillas

How to Make Enchilada Casserole

Step-by-Step

  1. Saute onion, peppers and garlic until softened
  2. Add beef and Worcestershire sauce (to taste), cumin and cilantro and brown, drain.
  3. Add can of beans and some of the enchilada sauce. Heat through
  4. Line bottom of a casserole dish with tortillas and pour on some of the enchilada sauce. Add a layer of the meat mixture and a layer of jack (or cheddar) cheese to cover, add some sauce and another layer of tortillas. Add the second layer of meat mixture (using it all) and a layer of pepper jack cheese to cover. Pour on remaining sauce
  5. Bake in 400 degree oven for 20 minutes or until cheese is melted and bubbly. Serve with sour cream and if you have it, guacamole.
