enchilada casserole

I make this with red or green enchilada sauce. My kids and husband love it. I was looking for an easy week night meal, and I rarely buy pre-cooked chicken, but I did, and this is a great, easy weeknight meal. I didn't think I liked the green enchilada sauce either, but once I tried it, I really liked it. Experiment when cooking! Happy Cooking!

- 1 rotisserie chicken
- 12 flour tortillas
- 1 can red enchilada sauce
- 1 can green enchilada sauce
- 2 cups cheddar cheese
- 2 cups mozzarella cheese
How To Make enchilada casserole

Step 1Spray 9x13 pans with cooking spray. Remove chicken from the bone, and tear into small pieces. Lay 2 tortillas in the bottom of the pan, and tear 1 in half, to fit bottom of pan. Lay 1/4 of the chicken in pan, pour 1 cup sauce over chicken, then 1 cup of cheese over that. Then another layer of tortillas, chicken, sauce, and cheese. Then prepare your second pan the same way. I like to use the red sauce and cheddar cheese and the green sauce with mozzarella cheese. You do what you and your family like. Bake on 350 degree for 30 minutes or until the cheese is melted and starting to brown.

Step 2Most of my kids like the red sauce, but my husband, myself, and a couple of kids like the green sauce. Try both, then decide which one you like for the next time you make this delicious casserole. Enjoy!
