Ingredients
- 1 large eggplant peeled & sliced 1/4 inch
- 11/2 cups flour
- 2 - eggs
- 1/2 cup milk
- 1 tablespoon garlic salt
- 1 teaspoon pepper
- 2 cups prego with mushroom pasta sauce or any other.
- 1 cup small crud cottage cheese
- 2 cups shredded mozzarella cheese
- 1/8 teaspoon basil
- 1/8 teaspoon parsley flakes
- 1/8 teaspoon oregano
- 1/2 cup vegetable oil for frying
How To Make eggplant parmesan

Step 1Mix eggs and milk together in one bowl. Mix flour with garlic salt and pepper in another. Take your sliced eggplant in dip into egg mixture and then four coating both sides.

Step 2Heat oil in pan and fry eggplant until golden brown set aside.

Step 3In a 9x13 pan coat the bottom with 1/2 cup of the pasta sauce. Then lay the fried eggplant on top of the sauce. Its ok if they are on top of each other.

Step 4Spoon the cottage cheese over the top of the eggplant. Then pour the remaining pasta sauce over the top of that. Then top with the mozzarella cheese.

Step 5Cover pan and cook 30 minutes @ 350. Take the cover off and sprinkle the basil, parsley and oregano over the cheese. Broil on high for about 10 minutes until top is slightly golden
