Perfect recipe for leftovers after a holiday meal! Uses leftover ham and leftover roasted vegetables to turn mac and cheese into a one dish meal. I really like this, and you can change the taste up by changing the roasted veggies you add. Great recipe for right after the holidays! From Southern Living with a few changes made by me.

Ingredients

  • 16 ounces corkscrew macaroni, dried
  • 3 tablespoons butter
  • 1 clove garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups milk
  • 1 cup sharp cheddar cheese, shredded
  • 10 ounces white cheddar cheese, shredded
  • 3 ounces cream cheese, softened
  • 1/2 teaspoon salt
  • 2 cups ham, cooked and shredded
  • 2 cups roasted vegetables, assorted, coarsely chopped
  • 1 1/4 cups ritz crackers, crushed
  • 2 tablespoons butter, melted

How To Make dinner mac and cheese

  • Step 1
    Preheat oven to 400 degrees. Prepare the pasta according to package directions.
  • Step 2
    Meanwhile, melt 3 tbsp butter in a Dutch oven over medium heat. Add minced garlic and cook until fragrant, about 1 1/2 minutes. Gradually whisk in flour; cook, whisking constantly, 1 minute. Gradually whisk in the milk until smooth; cook, whisking constantly for 8 to 10 minutes or until slightly thickened.
  • Step 3
    Whisk in 1 cup sharp Cheddar cheese and the next 3 ingredients until smooth. Remove from heat, and stir in the ham, vegetables, and hot cooked pasta.
  • Step 4
    Spoon the pasta mixture into a lightly greased 13 x 9 inch baking dish. Stir together the crushed cracker crumbs and 2 tbsp melted butter. Sprinkle over the pasta mixture.
  • Step 5
    Bake at 400 degrees for 25 to 30 minutes or until golden brown and bubbly. Let stand 5 minutes before serving.
