~ crunchy / cheesy chicken casserole ~

My family loves this chicken dish. Its so flavorful and they especially love the crunchy topping. Paired well with the Mexican inspired hash browns. Lots of cheesiness at my house tonight. Enjoy!

Ingredients

  • 10 - chicken thighs plus 2 boneless, skinless chicken breasts - poached and shredded
  • 1 tablespoon creole seasoning
  • 1 teaspoon salt
  • 2 tablespoons dry, minced onions
  • 1 - 7 ounces chopped, green chiles - drained
  • 3 cans cream of chicken soup - not family sized
  • 2 - 8 ounces bags, shredded velveeta cheese
  • 1 tablespoon red pepper flakes - optional
  • 6 - 8 ounces crushed taco flavored doritos or your favorite

How To Make ~ crunchy / cheesy chicken casserole ~

  • Step 1
    Poach chicken in water with creole seasoning and salt. Drain and remove meat from bones and shred.
  • Step 2
    Place chicken evenly into a 9 x 13 baking dish. Sprinkle with dry minced onion.
  • Step 3
    Preheat oven to 400 degree F. In a large skillet, mix together the soups, cheese and chiles. Bring to a simmer and stir until Cheese is melted and sauce is smooth. Stir in pepper flakes if using.
  • Step 4
    Pour the cheese sauce evenly over the chicken and sprinkle the top with the crushed Dorito's.
  • Step 5
    Bake for 20 - 25 minutes or until heated through and bubbly. Serve hot...my family loves this casserole...they always go back for seconds.
