This is a super quick and yummy meatless meal. It's incredibly easy and can be spiced up by using different vegetables or adding meat. Can be served alongside tortillas, chips, lettuce etc.

Ingredients

Add to Grocery List

corn
1 can(s)
black beans, rinsed & drained
2 can(s)
rotel tomatoes & chiles
1 pkg
taco seasoning mix
1 15 oz can(s)
tomato sauce
1 1/2 c
rice

OPTIONAL:

tortilla bowls
cheese
sour cream

How to Make Crockpot Fiesta Bowl

Step-by-Step

  • 1Pour all ingredients into the crockpot and stir.
  • 2Cook on high for 1 1/2 to 2 1/2 hours, stirring occasionally. Or low for 3-4 hours.
  • 3Can be served alongside chips or wrapped in a tortilla. Additionally, it can be served in a tortilla bowl sprinkled with cheese and sour cream.
