This is a super quick and yummy meatless meal. It's incredibly easy and can be spiced up by using different vegetables or adding meat. Can be served alongside tortillas, chips, lettuce etc.

Ingredients

  • 2 c
    water
  • 1 can(s)
    corn
  • 1 can(s)
    black beans, rinsed & drained
  • 2 can(s)
    rotel tomatoes & chiles
  • 1 pkg
    taco seasoning mix
  • 1 15 oz can(s)
    tomato sauce
  • 1 1/2 c
    rice
  • OPTIONAL:

  • ·
    tortilla bowls
  • ·
    cheese
  • ·
    sour cream

How to Make Crockpot Fiesta Bowl

Step-by-Step

  1. Pour all ingredients into the crockpot and stir.
  2. Cook on high for 1 1/2 to 2 1/2 hours, stirring occasionally. Or low for 3-4 hours.
  3. Can be served alongside chips or wrapped in a tortilla. Additionally, it can be served in a tortilla bowl sprinkled with cheese and sour cream.
