Ingredients
- 6 cups chili
- 6 cups cooked rice
- 1 cup corn
- 1/2 cup scalions chopped
- 1/2 cup red bell peppers
- 2 cups salsa, mild
- 2 cups shredded mexican cheese blend
- 1/4 cup chopped cilantro
How To Make chili rice & cheese bake

Step 1Sauté corn in a little butter for 3-5 minutes, add scallions and red pepper. Sauté 3-5 minutes more.

Step 2Add cooked rice to pan and sauté until rice is nicely separated. Add salsa and mix together.

Step 3Combine chili to rice mixture and put in a casserole dish. Bake in oven at 350 for 15 minutes, take out of oven and sprinkle cheese over the top. put back in oven for an additional 10-15 minutes until cheese is golden brown.
