Ingredients

  • 6 cups chili
  • 6 cups cooked rice
  • 1 cup corn
  • 1/2 cup scalions chopped
  • 1/2 cup red bell peppers
  • 2 cups salsa, mild
  • 2 cups shredded mexican cheese blend
  • 1/4 cup chopped cilantro

How To Make chili rice & cheese bake

  • Step 1
    Sauté corn in a little butter for 3-5 minutes, add scallions and red pepper. Sauté 3-5 minutes more.
  • Step 2
    Add cooked rice to pan and sauté until rice is nicely separated. Add salsa and mix together.
  • Step 3
    Combine chili to rice mixture and put in a casserole dish. Bake in oven at 350 for 15 minutes, take out of oven and sprinkle cheese over the top. put back in oven for an additional 10-15 minutes until cheese is golden brown.
