chili rellenos casserole

Most of the time I make "real" Chili Rellenos, but when I'm short on time I make this recipe. To me, it's a second to the real ones but I like it.

Ingredients

  • 1 pound ground beef
  • 1/2 - onion, chopped
  • 2 cans whole green chilies
  • 1 can chopped green chilies
  • 1 cup shredded mexican cheese
  • 4 - eggs
  • 1 1/2 cups milk
  • 1/4 cup flour
  • 1 tablespoon red pepper or to your taste

How To Make chili rellenos casserole

  • Step 1
    Brown ground meat and onions. Add salt and pepper. Add about 1 Tablespoon red pepper or to your taste.
  • Step 2
    In a casserole place whole green chilies on bottom. Add half the cheese. Add meat mixture. Add rest of cheese and chopped chilies.
  • Step 3
    Mix eggs and milk, add flour, mix well. Pour over casserole. Bake at 350* for about 50 minutes. Check on dish about 1/2 way through and cover with foil if getting too brown.
