As You Wish Corny Noodle Casserole

This came about because I had scads of corn and needed a place to use some of it.

It's super easy and very fresh tasting .. and not terribly heavy.

I call it As You Wish because you can add as much or as little of the yummy ingredients as you wish !

  • 4 oz
    elbow macaroni
  • 6 slice
  • 1/4 c
    rough chopped onions
  • 1/4 c
    rough chopped celery
  • 1/2 c
    diced carrots
  • 2 can(s)
    chopped green bell pepper
  • 1 c
    fresh corn
  • 4 oz
    velveeta queso blanco
  • 1/2 c
  • ·
    cayenne pepper, salt, black pepper to taste
  • ·
    optional toppings
  • 1/2 c
    shredded cheddar cheese - sharp or smoked
  • ·
    crumbled bacon
  • ·
    chopped green onion

How to Make As You Wish Corny Noodle Casserole


  1. Preheat oven to 350.
  2. Cook elbow macaroni only half way .. approximately 3 minutes. Drain and set aside.
  3. Cook bacon until crisp. Remove from pan, reserve drippings.

    Crumble bacon and set aside.
  4. Add vegetables to pan drippings and cook until just crisp-tender.

    Remove and drain.
  5. Melt the Velveeta and milk together.

    Mix pasta, vegetables, spices and Velveeta mixture together.
  6. Put into a greased 8 x 8 baking dish.

    Sprinkle with shredded cheese.

    Bake at 350 for 20 minutes or until bubbly.
  7. Serve hot topped with more shredded cheddar, bacon bits and green onion.

    Delicious eaten with Creamed Corn Bacon Cornbread
