Ingredients

  • 2 pounds ground chicken
  • 1 pound mushrooms, chopped finely
  • 1 teaspoon liquid smoke flavoring
  • 1 1/2 teaspoons old bay seasoning
  • 1 cup bread crumbs
  • 1 teaspoon tarragon, dried
  • 1 cup extra sharp cheddar cheese shredded
  • 1/2 cup monterey jack cheese with jalapeno peppers shredded
  • 5 slices bacon, cut into 1/4 inch pieces.
  • 3 tablespoons pimentos
  • 2 - heaping tablespoon mayonnaise
  • 1 teaspoon each of onion and garlic powder
  • 1/4 teaspoon smoked paprika

How To Make chicken patties stuffed with smoky pimento cheese

  • Step 1
    In an non stick pan cook bacon until crisp. Drain on paper towel and set aside. Reserve drippings Heat 2 tablespoon dripping and cook mushrooms until all juices are gone, remove to a bowl and mix in liquid smoke, set aside.
  • Step 2
    In another bowl mix together bacon, cheeses, pimentos, mayonnaise, smoked paprika, onion and garlic powder. Taste to add salt and pepper.
  • Step 3
    Form chicken into thin patties. Add a spoonful of pimento cheese and top with another patty. Salt and pepper each.
  • Step 4
    Heat bacon drippings in a skillet and cook patties 4 minutes, flip and cook 4 minutes more, until cooked through.
