Ingredients
- 2 pounds ground chicken
- 1 pound mushrooms, chopped finely
- 1 teaspoon liquid smoke flavoring
- 1 1/2 teaspoons old bay seasoning
- 1 cup bread crumbs
- 1 teaspoon tarragon, dried
- 1 cup extra sharp cheddar cheese shredded
- 1/2 cup monterey jack cheese with jalapeno peppers shredded
- 5 slices bacon, cut into 1/4 inch pieces.
- 3 tablespoons pimentos
- 2 - heaping tablespoon mayonnaise
- 1 teaspoon each of onion and garlic powder
- 1/4 teaspoon smoked paprika

Step 1In an non stick pan cook bacon until crisp. Drain on paper towel and set aside. Reserve drippings Heat 2 tablespoon dripping and cook mushrooms until all juices are gone, remove to a bowl and mix in liquid smoke, set aside.

Step 2In another bowl mix together bacon, cheeses, pimentos, mayonnaise, smoked paprika, onion and garlic powder. Taste to add salt and pepper.

Step 3Form chicken into thin patties. Add a spoonful of pimento cheese and top with another patty. Salt and pepper each.

Step 4Heat bacon drippings in a skillet and cook patties 4 minutes, flip and cook 4 minutes more, until cooked through.
