ground chicken
1 lb
mushrooms, chopped finely
1 tsp
liquid smoke flavoring
1 1/2 tsp
old bay seasoning
1 c
bread crumbs
1 tsp
tarragon, dried
1 c
extra sharp cheddar cheese shredded
1/2 c
monterey jack cheese with jalapeno peppers shredded
5 slice
bacon, cut into 1/4 inch pieces.
3 Tbsp
heaping tablespoon mayonnaise
1 tsp
each of onion and garlic powder
1/4 tsp
smoked paprika

How to Make Chicken Patties Stuffed With Smoky Pimento Cheese


  • 1In an non stick pan cook bacon until crisp. Drain on paper towel and set aside. Reserve drippings
    Heat 2 tablespoon dripping and cook mushrooms until all juices are gone, remove to a bowl and mix in liquid smoke, set aside.
  • 2In another bowl mix together bacon, cheeses, pimentos, mayonnaise, smoked paprika, onion and garlic powder. Taste to add salt and pepper.
  • 3Form chicken into thin patties. Add a spoonful of pimento cheese and top with another patty. Salt and pepper each.
  • 4Heat bacon drippings in a skillet and cook patties 4 minutes, flip and cook 4 minutes more, until cooked through.
