This was my mothers favorite winter recipe. it always was a family favorite.

Ingredients

  • 3 tablespoons olive oil
  • - flour
  • 2 to 3 pounds chuck roast, cubed
  • 4 medium potatoes, cubed
  • 2 large onions, diced
  • 3 large carrot, sliced
  • 1 pound frozen mixed vegetables
  • 4 stalks celery, chopped
  • 2 cans diced tomato's (28oz.)
  • 2 cans beef broth (32 oz.)
  • 7 large dashes hot sauce
  • 4 tablespoons minced garlic
  • 2 tablespoons chopped bazil
  • 4 - bay leaves
  • 1/4 cup parsley flakes
  • - salt and pepper to taste

How To Make vegetable beef soup

  • Step 1
    Flour & Brown Meat in the Olive Oil.
  • Step 2
    Add all remaining ingredients
  • Step 3
    Cover & simmer 2 to 3 hours or until all ingredients are tender
