Ingredients
- 4 slices veal cutlets,4 ounces or more,sliced thin and pounded.
- 1 large egg beaten
- 1 cup half and half
- 2 cups italian bread crumbs
- 1 cup all purpose flour
- 1 bottle cooking oil
- 1 bunch arugula
- 2 medium radishes,grated
- 1 medium carrot,grated
- 4 small tomatoes,fresh,quartered
- 1/2 large cucumber,seedless,diced
- THE DRESSING
- 1 large lemon,juiced and zest
- 1 cup olive oil, extra virgin
- 1 pinch each of white pepper,garlic powder and salt
How To Make veal milanese

Step 1Begin by dredging the veal in the flour then the egg,then the bread crumbs,repeat. Brown the veal in one cup of hot oil,350 degrees for 90 seconds per side,drain on paper towels.

Step 2Assemble the salad,toss with the dressing and cheese and spoon over each cutlet,serve with a lemon wedge. Enjoy!! :)

Step 3Note: To make the dressing I place my stainless steel mixing bowl and wire whisk in the freezer for 30 minutes. This little trick helps emulsify the dressing quickly. Just squeeze in the lemon juice,add the zest and spices and slowly drizzle in the oil while whisking vigorously.
