Ingredients

  • MEAT SAUCE
  • 1 1/4 pounds lean ground beef
  • 1/3 cup onioin finely diced
  • 2-3 cloves garlic, pressed
  • 1/4 cup red wine
  • 2 tablespoons olive oil
  • 16 ounces newman's own marinara sauce
  • 1/4 teaspoon thyme (optional)
  • 2 - bay leaves (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 2 tablespoons chopped fresh parsley
  • CHEESE SAUCE
  • 16 ounces reduced fate ricotta
  • 16 ounces low-fat cottage cheese
  • 1/3 cup milk
  • 2 tablespoons chopped fresh parsley
  • 1 - large egg
  • 4 cups grated mozzarella cheese

How To Make three cheese lasagna recipe

  • Step 1
    To make meat sauce: In a large pot add 2 TBSP olive oil and simmer chopped onions over medium heat about 5 minutes. Add pressed garlic and sauté additional 2 minutes stirring constantly. Add ground beef and sauté until all pink is gone. Add 1 cup marinara, add wine, mix well and cook for a few minutes. Add 1 cup marinara sauce, bay leaves, salt, pepper, thyme, sugar and parsley. Mix well, reduce heat, cover and simmer 15-20 minutes.
  • Step 2
    To make Cheese Sauce: Make while meat sauce is simmering. Combine all cheese sauce ingredients and mix well. Boil 1 package of lasagna noodles until cooked al dente.
  • Step 3
    Assembly: Preheat oven to 375degrees. Spread a couple tablespoons of meat sauce in the bottom of your 9x13 pyrex baking dish. Place 3-4 noodles on the bottom of dish so that edges are touching. Add half of the meat sauce, then half of the cheese sauce, 1 cup grated mozzarella cheese sprinkled evenly. Now add 3-4 more noodles. Repeat layers as above. Line the top of the lasagna with 9-12 evenly space toothpicks. Cover the top with foil, not air tight. Bake 45 minutes.
  • Step 4
    Remove foil and broil another 3-5 minutes, or until cheese turns golden. Let lasagna cool for at least 30 minutes or it will ooze too much.
