A great way to prepare a lesser expensive cut of steak. The rub will "lock in" the moisture over high heat, for a less fatty cut.

  • 1 large
    thick cut sirloin steak
  • 1 tsp
    good olive oil
  • ·
  • 3 Tbsp
    dark roast coffee, medium ground
  • 1 tsp
    garlic powder
  • 1 tsp
    smoked paprika
  • 1 tsp
    brown sugar
  • 1 pinch
    cayenne pepper
  • ·
    fresh ground sea salt & pepper

How to Make Thick Cut Sirloin with Cowboy Coffee Rub


  1. Brush your steak with the olive oil
  2. Mix all your rub ingredients;thoroughlly rub your steak with the rub, store refrigerated in a zip lock bag 2-24 hours.
  3. Remove from the fridge, let stand at room temperature at least 30 mns.
  4. Prepare coals to medium high to high heat. Cover and cook over direct heat 8 minutes per side for medium rare.
