tex-mex three bean crockpot chili

I make this chili starting in the fall. It is delicious and my family loves it! It is a bit spicy but could be tamed down with a few adjustments.

Ingredients

  • 1 pound ground beef or turkey if preferred
  • 2 cloves garlic, minced
  • 3-4 teaspoons chili powder
  • 1/2 teaspoon gound cumin
  • 1 can red kidney beans, drained and rinsed
  • 1 can great northern beans, drained and rinsed
  • 1 can butter beans, drained and rinsed
  • 1 cup onion, chopped
  • 1/2 cup green pepper, chopped
  • 10 ounces can tomatoes with green chilies (mild, reg or hot)
  • 1 can tomatoe juice 12 oz. can add more for desired consistency
  • 6 ounces can tomatoe paste
  • 1/4 teaspoon salt
  • - shredded cheddar cheese
  • - sour cream

How To Make tex-mex three bean crockpot chili

  • Step 1
    Cook beef or turkey and garlic until brown. Drain. Stir in chili powder and cumin; cook 2 minutes.
  • Step 2
    In crock pot combine beans, onion, green pepper. Add undrained tomatoes with green chilies, tomato juice, tomato paste, and salt. Stir in meat.
  • Step 3
    Cook low for 8-10 hours or high for 4-5 hours.
  • Step 4
    Top with cheese and sour cream if desired.
