tasty beef - n - rice skillet
It is just my son and I tonight...love cooking for him, he'll eat anything if it don't eat him first...lol, although he's not always been that easy to please...he loves this one skillet meal...asked me to make it tonight, you could add a can of corn too...I have also added corn chips...make it your own!! :) My photos

Ingredients
- 1 1/2 - 2 cups uncooked minute rice, prepared according to box directions
- 1 pound ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup beef broth
- 1/2 teaspoon beef bouillon paste - optional
- 1 cup tomato sauce or chopped tomatoes in juice
- 2 1/2 tablespoons chili powder
- 1 1/2 teaspoons cumin
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 1 - 15 ounces can ranch style pinto beans
- 1 - 4 ounces can green chiles
- 1 can corn, drained - optional
- 1 cup shredded pepper jack cheese - or cheddar
- - toppings - sour cream, corn chips,chopped green onion - optional

Step 1Cook rice according to package directions.

Step 2Meanwhile, in a large skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain.

Step 3Stir in the rice, beans, broth, tomato sauce, chili powder, salt, cumin, chiles, corn and pepper; heat through. This pic is missing the rice...oops!

Step 4Sprinkle with cheese, cover and cook until cheese is melted - sometimes I set under broiler. I leave this set for 5 minutes to thicken up.

Step 5Serve by itself or with your favorite toppings.
