I've been making this for years - I just never thought to write it down. Not too spicy - just a nice kick. So many amazing flavors are infused...chorizo, coffee, beer, 2 types of peppers and a great punch of tomato flavor. It's easy enough to make on a week night but special enough for the big game night. Enjoy this with tortilla chips, sour cream and sharp cheddar cheese...oh and don't forget your beer!

Ingredients

  • 1 pound ground beef, 80/20
  • 1/2 pound chorizo
  • 1/3 cup kidney beans, dry soaked overnight
  • 1/3 cup pinto beans, dry soaked overnight
  • 1 can diced tomatoes 14.5 oz, undrained
  • 1 cup ketchup
  • 1/2 medium onion diced
  • 1 - bell pepper diced
  • 2 cloves garlic minced
  • 1 large hatch pepper, diced
  • 2 large pickeled jalapenos, diced
  • 1 teaspoon ground cumin
  • 3 tablespoons chili powder
  • 1 tablespoon ancho chili powder
  • 1 - 12oz beer - like coors
  • 1/2 cup strong brewed coffee
  • - salt and pepper to taste
  • FIX'ENS:
  • 1 cup shredded sharp cheddar
  • 1 cup sour cream
  • 1 cup hatch and tomatillo salsa - my kicked up salsa verde recipe on jap
  • - tortilla chips, or fritos

How To Make tammy's texas chili

  • Step 1
    In a dutch oven brown ground beef with chorizo, onion, bell pepper, hatch pepper, garlic and jalepeno.
  • Step 2
    Add chili powders and cumin. Stir and cook until onion is translucent.
  • Step 3
    Add beer, canned tomatoes and juice,ketchup, and coffee. Turn heat down and simmer for an hour.
  • Step 4
    While chili is simmering cook your beans until tender about an hour.
  • Step 5
    Drain beans and add them to the chili. Taste for seasoning add salt and pepper as desired.
  • Step 6
    Serve with your favorite fix'ens.
